Sulle ali del cambiamento

I prodotti refrigerati sono stati il settore che ha offerto le performances migliori tra tutti quelli del traffico containerizzato negli ultimi dieci anni, con tassi di crescita media annuale di oltre il 7% di media. Ma ora ci si attendono probabili cambiamenti, con nuovi attori, nuove tecnologie e qualche evento inatteso, tanto che il quadro futuro della situazione potrebbe cambiare radicalmente.

Il traffico marittimo internazionale di beni refrigerati è stato sempre in positivo in termini di performances e crescita negli ultimi dieci anni, con tassi di crescita annuali superiori al 7%.

Questo non perché i vettori, gli spedizionieri e le varie agenzie specializzate del settore abbiano pianificato gli acquisiti di capitali, gli sviluppi nella capacità e i prezzi in modo tale che si producessero dei margini e dei ritorni sugli investimenti per tutti questi anni, ma perché i volumi di traffico e di crescita si sono mantenuti, nonostante tutto, solidi.




Un certo numero di fattori ha guidato il mercato. La piccola rivoluzione tecnologica che sta sempre di più spingendo verso l'utilizzo assoluto di containers per prodotti refrigerati continua incessante, con stime della Manalytics che affermano che i containers per ora si sono aggiudicati il 50% del mercato internazionale dei prodotti refrigerati. I containers permettono la movimentazione di beni ad alta deperibilità e di altri prodotti refrigerati in modalità door-to-door, il che assicura controllo positivo e minimizza le perdite della ri-movimentazione, a volte necessaria.

I containers permettono anche spedizioni di dimensioni inferiori e customization degli ordini, tutte procedure utili carichi just-in-time e minimizzazione dell'inventario. Gli operatori su breakbulk, l'alternativa più valida al container, vedono anch'essi i vantaggi insiti nella containerizzazione, e pertanto sulle nuove navi hanno posto apparecchiature e altri attrezzi utili per il posizionamento dei containers frigo. Un esempio pratico è costituito dalle nuove navi della Lauritzen, che hanno installato a bordo capacità per 180 containers.

Le supply chains sono sempre più lunghe come tempi e distanze, e i containers permettono sforzi aggiuntivi di logistica in modo più efficiente e con meno perdite. L'informazione è un gradiente rilevante in tutti i momenti della supply chain. I mercati e gli operatori necessitano di flussi di informazioni costanti e continui, riguardo, per fare un esempio, a conoscenza della disponibilità di prodotti in scorte, condizioni di mercato e il monitoraggio ininterrotto delle navi. L'utilizzo del trasporto mediante containers facilità il flusso informativo e rende le informazioni utili più facilmente reperibili e disponibili.

Ad oggi, la maggior parte dei prodotti frutticoli e vegetali sono disponibili nei mercati settentrionali per quasi tutto l'anno. Non molto tempo fa, gli avocados erano una novità in molti mercati. Oggi, grazie alle tecnologie e ai containers, gli avocados del Sud Africa si consumano regolarmente tutto l'anno in Europa. Tutto grazie ai containers, alla loro affidabilità e flessibilità. Il container è diventato sinonimo di prodotti refrigerati.

Per venire incontro alle crescenti aspettative, la qualità del cibo sta continuamente migliorando. Una volta che una persona assaggia verdura fresca, ad esempio, ne vuole sempre di più ed è meno disposta a mangiare quella congelata. Ci sono tante variabili nella decisione finale d'acquisto del consumatore - reddito disponibile, prezzi, tassi di cambio per citarne alcune - ma il fattore guida nella scelta di un prodotto agricolo è senz'altro la qualità, qualità che si ottiene grazie alla containerizzazione. Nel periodo attuale di recessione economica globale, sarà interessante vedere l'impatto della riduzione del reddito disponibile sulle relazioni tra prodotti freschi e surgelati nei patterns economici internazionali di scambio. Probabilmente i prodotti freschi conserveranno la loro quota di mercato.

I miglioramenti tecnologici sono un altro fattore chiave nel mercato dei prodotti refrigerati. Parte di questa tecnologia è disponibile a spedizionieri e vettori - che trasportano prodotti in atmosfere controllate, a umidità regolata dall'esterno, con monitoraggio esterno a telecomando - e apporta molti benefici, alcuni dei quali poco visibili: maggiore flusso d'aria, tecniche di isolamento superiori, controllo automatizzato interno al container. Insomma, i containers frigo migliorano progressivamente, e con essi la qualità dei cibi contenuti. Senza questi miglioramenti, non sarebbe sostenibile la crescita nel settore della refrigerazione a mezzo container.

Allora perché vettori, spedizionieri ed agenzie del settore non colgono l'occasione, invece di restare inerti? Probabilmente la motivazione principale risiede nell'acquisto eccessivo di capacità che detti attori hanno fatto nei periodi di boom per realizzare maggiore cash flow. Ora come ora però l'industria navale sembra seguire il trend di sviluppo del mercato dei containers, e un esempio è la nuova serie di navi Regina Maersk, con 700 plugs per containers frigo per una capacità totale di 6.600 Teus, che da un lato segue il boom del settore containers frigo e dall'altro stimola una nuova produzione di tale equipaggiamento.

I vettori spesso seguono il comportamento dei loro colleghi e concorrenti, pertanto un aumento di capacità da parte di uno incoraggerebbe sicuramente azioni simili degli altri. A ciò si aggiunga che l'approccio commodity-based al marketing (opposto alla differenziazione dei servizi e dei prodotti) e l'eccesso di capacità seguono un ammontare limitato di cargo, una caduta nei prezzi e diminuzioni del return on investment. Ma con vettori e agenzie di spedizione che contraggono il mercato della refrigerazione, la crescita qui sottolineata continua lo stesso, e si registrano carenze in capacità e in attrezzature pari a quelle che si stanno verificando oggi nella west coast del Nord America. Incrementi nelle tariffe del trasporto merci e negli incomes sono fortemente attesi, così come nuovi periodi di eccessi di capacità.

Come possono essere mitigati il boom e la contrazione del settore? Forse sviluppando servizi che differenzino l'offerta dei fornitori. Gli operatori su containers lo fecero negli anni Ottanta, ma la pratica è rimasta in disuso dato che gli operatori hanno fatto di tutto per ridurre i loro costi operativi.

Un altro fattore significativo nel ciclo di boom e contrazione del settore è la difficoltà nel prevedere le relazioni di lungo termine tra domanda e offerta e gli accadimenti di breve periodo (come le catastrofi ambientali). La diffusione rapida della BSE (il morbo della mucca pazza) e dell'FMD (food and mouth disease) in Europa ha causato interruzioni massicce di fornitura dalle postazioni tradizionali, e ha cambiato i patterns di trade delle carni in modo alquanto significativo.

La situazione del mercato della carne dell'Unione Europa ha toccato anche i Paesi adiacenti dell'Europa dell'Est e altri ancora, e il risultato è stato che Sud America, Australia e Nuova Zelanda ne hanno tratto vantaggio e si sono sostituiti quali fornitori di carni sane e di migliore qualità.

La sfaccettatura più interessante del fenomeno in generale è che la domanda europea di carne non è sostanzialmente diminuita. Le tradizionali fonti di approvvigionamento sono mutate e il mix alimentare è in qualche modo cambiato, ma la domanda di prodotto continua. In un documento della Commissione Europea si dice che il consumo di carne bovina, dopo una breve recessione, è addirittura aumentato in Germania, Spagna, Francia, Italia, Grecia, Portogallo, Austria e Belgio, anche quando è stata dichiarata fuorilegge la Fiorentina dalle autorità italiane.

I traffici di banane rappresentano un altro esempio di cambiamento esplosivo per gli attori interessati, solo che stavolta la causa è stata di tipo politico, non sanitario. Si possono prevedere questi eventi? Di certo non facilmente con i mezzi di previsione tradizionali, ma è possibile sviluppare una strategia di flessibilità e contingenza per mitigare la parte di contrazione del ciclo, anche se tale strategia può compromettere leggermente la fase di boom.

Le previsioni e le strategie di mercato possono anche vedersi dal punto di vista dei beni e dei patterns di domanda quali armi per ridurre l'impatto di booms e contrazioni. Si prenda l'esempio delle mele. Per anni il Nord Ovest del Pacifico e lo Stato americano di Washington sono stati i maggiori fornitori di mele delle Nazioni dell'area Asia-Pacifico. Ma negli anni recenti, la Cina ha investito pesantemente in programmi di agricoltura, e tra i beneficiari c'è stata la produzione di mele. Come risultato, gli exports di mele da Washington sono diminuiti in modo significativo, le esportazioni cinesi sono cresciute e tutta la bilancia commerciale del settore mele ha cambiato direzione.

Cosa significa questo per un vettore oceanico? Quello che aspetta l'evolversi degli eventi, che non anticipa il mercato e non agisce per differenziare i suoi servizi e i suoi prodotti, ci dovrà attendere il ciclo tradizionale di boom e contrazione. Ma il vettore che sviluppa in modo proattivo le sue strategie di mercato per tutti gli eventi indicati, i cambiamenti dettati dal ciclo implicano grandi opportunità da sfruttare.

Infine, nell'area delle "cose da fare" nel mercato attuale, c'è la questione degli scarti. Gli scarti sono in calo rispetto ai livelli del passato grazie a containers e miglioramenti tecnologici, ma molto resta da fare. Si stima che circa il 10% del prodotto si perde tra area produzione e mercato finale in un movimento che si basa su containers oceanici, e circa il 30% del prodotto si perde per ragioni simili nelle spedizioni refrigerate aeree.

Una recente ricerca della Manalytics sui vettori ha mostrato che l'attrezzatura di cui dispongono i vettori presenta livelli di affidabilità tra l'80% e il 95% per il settore refrigerazione, e ciò implica che il container non è affidabile per percentuali che variano dal 5% al 20% in totale. È una percentuale elevata, e non c'è dubbio che sia un fattore chiave per spiegare gli elevati livelli di scarti. In un'altro studio fatto da CH Robinson (un 3PL americano), gli intervistati si sono mostrati soddisfatti solamente il 44% delle volte.

Cosa si può fare adesso? I manifattori di unità frigo, come la Carrier Transicold, stanno valutando la tecnologia che può identificare in modo proattivo i punti di debolezza e aiutare a risolvere i problemi in tempo. I vettori e le compagnie di leasing dovrebbero valutare i trade-offs di questa tecnologia, e degli sforzi proattivi di mercato, nello sviluppo di strategie adeguate di refrigerazione e di containers frigo.

La discussione sta toccando la natura mutevole del commercio e i requisiti non raggiunti di livelli dei servizi del mercato internazionale dei containers frigo, e un certo numero di azioni ipotetiche è emerso dall'analisi. Ma il cambiamento maggiore di tutti è ancora in via di realizzazione, ed è stato innescato dall'ingresso nel mercato di grandi spedizionieri e vettori come Wal-Mart, Carrefour e le catene globali di fast food. Le grandi catene oggi rappresentano il 50% del mercato europeo. Compagnie come queste sono conosciute per il rigoroso management delle loro supply chains - che sono utilizzate per creare vantaggi competitivi e assicurare i livelli più elevati di qualità e disponibilità dei prodotti.

Le misure utilizzate nelle strategie di supply chain sono guidate dalla profittabilità globale delle rispettive compagnie, non dal cost management di per sé (sebbene chiunque rifornisca queste imprese sappia bene quanto siano rigorosamente monitorati e tenuti sotto controllo tutti gli aspetti e gli elementi di costo). Pertanto, l'impatto sulle entrate di top line di una strategia di supply chain è analizzato in grande dettaglio, anche se l'aspetto costi non si può dire sia trascurato. La disponibilità del prodotto giusto al posto giusto e al momento giusto può implicare un movimento nei prezzi e nelle entrate fino al 20%, di solito per un valore maggiore del costo totale dei servizi logistici. Gli impatti sulle entrate sono pesate rispetto a costi, implicazioni su flussi di cassa e investimenti di una data supply chain e situazione globale.

Adattando l'approccio appena delineato alla catena del freddo, l'emergere di spedizionieri e di vettori dominanti potrebbe causare i mutamenti seguenti nelle catene logistiche e nelle necessità del sistema di trasporto dei containers:

  1. Realizzazione del Just-In-Time: come caso estremo si consideri la Procter&Gamble. Il punto di JIT della P&G è il checkout counter, dato che i prodotti della P&G sono consegnati alla WalMart fino alla vendita al cliente finale. Ma si ottiene qualche buon risultato senza toccare punti estremi come questi. Per esempio minimizzando l'inventario o controllando i tempi di consegna e i ritardi.

  2. Ordini basati sulla domanda reale e contemporanea dei consumatori nei punti vendita: il punto chiave è il conteggio di checkouts. Al crescere o diminuire dei volumi di vendita, o al variare della domanda da un prodotto all'altro o da una regione all'altra, la supply chain dovrebbe manifestare delle reazioni. È normale routine per le rinfuse solide, e molti ritengono che accadrà a breve anche per i prodotti refrigerati.

  3. Livelli di qualità e controllo di scarti/danni: l'idea del livello di affidabilità dell'80% deve essere un pensiero molto poco comune nella mente dei leaders delle maggiori compagnie di logistica. Ci si attende che questi livelli divengano, col tempo, inaccettabili.

  4. Integrazione e gestione della catena del freddo fino dal luogo di origine: questa iniziativa mira a ridurre il numero di trading partners e punti di rallentamento della catena logistica. L'impatto si fa sentire in molte aree. Ridurre la supply chain, eliminando progressivamente gli anelli più deboli, porta a velocizzare, oltreché il trasporto, anche il flusso di informazioni.

  5. Identificazione di nuove fonti d'origine: gli spedizionieri e i vettori globali sono sempre in cerca di nuovi luoghi dai quali approvvigionarsi, che essi giudicano in base a qualità, prezzo, fattori d'ordine logistico e ciclo degli ordini. La localizzazione ideale per l'approvvigionamento del cibo è il più vicino possibile al punto di vendita. Ma questo non è sempre possibile, com'è ovvio, ma il focus resta su soluzioni a carattere locale. I fornitori che effettuano le spedizioni da località lontane devono assicurarsi che la qualità e la disponibilità del loro prodotto non siano seconde a nessuno, se non vogliono avere a che fare con una concorrenza locale agguerrita e, quantomeno dal punto di vista logistico, avvantaggiata.

  6. Investimenti in tecnologie: la Wal-Mart è conosciuta per i suoi assistant store managers amichevoli e per il lay-out gradevole e semplice dei suoi magazzini. Quello che però non è noto a tutti, fuorché agli investitori ed ai fornitori, è il grado con cui la compagnia utilizza le nuove tecnologie per ottenere livelli di performance superiori. Prima di tutto c'è l'Information Technology. I miglioramenti tecnologici sono ricercati anche nel campo dei trasporti e dell'equipaggiamento di magazzino, nella gestione dei materiali e nel sistema di processing delle ordinazioni. I fornitori della catena del freddo devono tenere testa adeguatamente a questo forte investimento in tecnologie.

  7. Strategie di post-posizionamento e di trans-loading: si è prima fatto riferimento al fatto che cicli di ordini corti e rifornimenti basati sulla logica del punto vendita sono la base di ogni catena logistica per prodotti tipo rinfuse solide. Anche il post-posizionamento intermedio è critico per catene siffatte, ovvero i centri di smistamento e di stoccaggio, e costituisce senza alcuna ombra di dubbio un elemento cruciale per consegnare i prodotti al momento giusto e nel posto giusto. Dopo un viaggio di 20 giorni da una fonte asiatica, il dettagliante usa gli ultimi cinque giorni del ciclo degli ordini per assicurarsi che siano massimizzate le opportunità di guadagno.

Che riflessioni si possono fare allora in proposito per la catena del freddo? I prodotti in rinfuse solide possono essere lasciati comodamente nei magazzini senza quasi tempo limite, mentre i prodotti refrigerati pongono problemi nel breve quantomeno di conservazione. E chi dovrebbe essere il fornitore, colui che implementi le soluzioni future per la catena del freddo? Le sfide sono molte, sia nell'ambiente di oggi che nel mondo frigo di domani, in cui tira una forte aria di cambiamento, ma la crescita e la natura globale dei patterns di trade dei prodotti refrigerati che viaggiano su containers non mostrano segni di rallentamento.

Che emergerà quale leader? Chi vede il mercato mezzo pieno e non mezzo vuoto e svilupperà programmi strategici di crescita per i grandi clienti del futuro? Chi abbraccerà le nuove tecnologie ed implementerà le nuove soluzioni informatiche nell'area della refrigerazione? Solo il tempo potrà dirlo.
